VINIFICATION

1st sorting in the vineyard. Manual sorting on a vibrating table, followed by destemming with a Pellenc WINERY. Densimetric sorting. Cooling of the harvest using a cryogenic tunnel (by spraying with liquid nitrogen). Gravity vatting using a vat. Vinification in wooden vats and small capacity cement vats. Cold pre-fermentation maceration (8°C). Entirely manual pigeages. Alcoholic fermentation at low temperature (28°C).

​ Duration of maceration: 25 to 32 days. Aging in barrels for 16 months, including 30% new barrels.

VINIFICATION

First sorting in the vineyard. Integral harvest in small crates. Pressing of the whole harvest with a pneumatic press for about 2 hours. Cold settling for 24 hours. Cold liquid stabilization for 6 to 8 days. Alcoholic fermentation between 15°C and 18°C for about 15 days. Aging on fine lees for 8 to 10 months with stirring of the lees once or twice a week. This wine will not be pumped or filtered until it is bottled: all the vinification and aging manipulations will be carried out by gravity.

VINIFICATION

Manual harvest in small crates with a first sorting in the vineyard. Pre-fermentation cold maceration. Manual punching down. Aged in barrels for 15 months.
